Fudgy Chocolate Brownies

I'm calling these fudgy brownies as some people mistakenly call cake slices brownies. Oh no, no, no!

A brownie must always be a rich chocolatey slice of heaven that is on the fudgy side. If you want a slice of cake, have a slice of cake. Leave our brownies alone!

There, rant over.

To make these fudgy brownies even more special I folded some golden pineapple into the brownie batter and once the tray bake was cool, I topped it with chocolate fudge icing and finished it with slices of pineapple and some dark chocolate strands.

How do you make fudgy brownies?

So what's my secret to really fudgy brownies? I pop them in the fridge overnight. Believe me, if you can leave them alone in the fridge until the next day you will reap the benefits. What comes out the fridge is the most indulgent chocolate treat imaginable.

Honestly try it and see. You'll thank me for the tip.

Flax eggs

If you're vegetarian, you can make these brownies with standard eggs, but for this recipe I used flax eggs in place of eggs, so everyone can enjoy them.

How do you make flax eggs?

Flax eggs are really simple to make. Just whizz up flax seeds, which are also called linseeds, in a blender or food processor until you have a powder.

For each egg, mix 1 tablespoon of flax seed powder with 3 tablespoons of water.

For this recipe you need 3 flax eggs so that's 3 tbsp of flax seed powder mixed with 9 tbsp of water. Once it's mixed you leave the bowl in the fridge for 20 to 30 minutes until the flax eggs have become gloopy. At this point they are ready to add to the mixture.

Tinned Pineapple

As I mentioned before I added pineapple to these brownies. Brownies can include dried fruit but I sometimes include fresh fruit, which adds a different texture to the brownies. Blueberries, raspberries and pineapple are all good choices.

Now I say fresh fruit and you may raise your eyebrows when I call tinned fruit fresh, but it's actually cut and packed so quickly that it is fresh and tinned fruit can have more nutrients than the fruit that has travelled the world, been stored in warehouses, then sat on a supermarket shelf for a week or two.

Tinned pineapple is a great store cupboard standby. It's convenient and there's a lot less waste than there is with a whole pineapple, which can be hard to use all at once, as well as all that faffing about cutting it.

  1. Pop some tinned pineapple chunks in a tub in your packed lunch to help with your five-a-day.
  2. Add some to your next curry for a fruity bite, you can add it to the curry itself or chop it and add it to the rice.
  3. Add it to a pizza.

  5. Serve it on crispbreads or rice cakes with cream cheese.

I topped my brownies with chocolate fudge icing. I use Betty Crocker which is delicious stuff and suitable for vegans. Then I decorated the brownies with pineapple chunks and chocolate strands. I brushed the pineapple with a little edible gold dust, which you can buy from Tesco. For that little Christmassy touch, but it's up to you if you use it.

Fudgy Pineapple Chocolate Brownies

Rich and indulgent chocolate and pineapple brownies topped with chocolate fudge icing and pineapple. Made with flax eggs. Suitable for vegetarians, vegans and those following a dairy-free and egg-free diet.

ingredients

  • 200gdark chocolate

  • 200gdairy free spread

  • 3tbspflax seeds

  • 2 tspvanilla extract

  • 200glight brown sugar

  • 80gplain flour

  • 260g drained tinned pineapple

  • 200g chocolate fudge icing

  • a pinch ofsalt

instructions

  1. Make the flax eggs. Whizz flax seeds to a powder in foodprocessor or blender then mix 3 tbsp of the flax seed powder with 9 tbspwater and leave in the fridge for 20-30 mins to thicken. These replace 3 eggs ina standard recipe.

  2. Preheat the oven to 180c/160c fan/350f/gas mark 4.

  3. Melt the chocolate and dairy free spread in a bain marie(a bowl over gently simmering water, make sure the bowl doesn't touch the water or the chocolate could seize)until melted.

  4. In a large bowl whisk the flax eggswith the sugar, vanilla extract and pinch of salt until light and frothy, then add the chocolate mixture and whisk again.

  5. Fold in the flour, then most of the pineapple chunks (keep some aside for decoration) and pour the brownie batter in a lined square brownie pan.

  6. Bake for 30-35 minutes.

  7. Leave to cool then pop in the fridge overnight.

  8. For extra luxury top with chocolate buttercream, pineapple chunks brushed with edible glitter and chocolate sprinkles.

  9. Enjoy!

NOTES:

Don't worry if the brownies seem a little soft when you take them out after 35 minutes, then will start to set as they cool and continue to set in the fridge overnight.
