If you are a fan of homemade cake pops, you will love these homemade brownie pops. They are just like cake pops but are made with brownies instead of cake!

I absolutely love brownies and cake pops, so naturally I wanted to make brownie pops from scratch. They are definitely not as popular as cake pops. Most people probably don’t even think that you can use brownies, but it is such a fun variation.

And why not decorate them for a certain theme, for example, in this recipe, I did Halloween brownie pops. They are so easy to make, if I can do it, you can do it. Let’s get started!

Step 1: Gather the ingredients

In order to make brownie pops at home you need just a handful of ingredients:

  • Brownies – You can use your own favorite recipe or follow this brownie tutorial or just use a brownie mix from a box along with all the required ingredients to make them of course.
  • Frosting – I usually will use a chocolate frosting, either premade or homemade chocolate buttercream from this chocolate cake recipe.
  • Chocolate – You can use candy melts, chocolate chips, chocolate bars, or my favorite, CandiQuik all of which can be found online or at places like Walmart, Target, Michael’s, etc.
  • Decorations – You can use sprinkles, red hots, mike and ikes, etc.

Tools

  • Bowls
  • Knife
  • Cutting board
  • Sheet pan
  • Parchment paper
  • Styrofoam block with holes in it, optional
  • Lollipop sticks – You can use the longer ones or the shorter ones.

Step 2: How to make brownie pops at home

Begin by following your favorite brownie recipe and make the brownies. Once the brownies have been prepared and baked, allow them to cool completely. It will take 30 minutes to an hour, depending on how cool your home is.

Then cut along the inside of the brownie about a quarter inch away from the pan, this part next to the pan is usually more hard and not as soft, so we don’t want to use that. You can just eat it later if you like.

Use a spatula or spoon and scoop out the brownies and place them in a large bowl.

Add a few large tablespoons of frosting and then mix it all together with the brownies. Use your clean hands or wear food prep gloves.

Note: If the brownie is already pretty “fudgey” you may not even need much frosting. If it is more of a cake-like brownie, you may need more frosting.

Take a tablespoon and scoop out some brownie and then roll it into a ball. Place it onto a sheet pan or a plate or something, lined with parchment paper.

After they are all rolled out and on the pan, place the pan in the freezer and allow them to chill and firm up for about 30 to 45 minutes. They shouldn’t be frozen, but nice and firm.

Step 3: Place the sticks in the brownie balls

Time to melt the chocolate, whatever kind that you want to use. The CandiQuick brand seems to melt the thinnest and is easier to dip, but candy melts and regular chocolate works great too. If you are using candy melts, you may want to add a few teaspoons of shortening while melting them, it helps to thin it out.

Melt the chocolate in the microwave using bursts of 30 seconds, and stirring, until melted. Or use the double boiler method on the stovetop. Then pour the melted chocolate in a tall glass, it makes dipping easier, instead of keeping the chocolate in a wide bowl.

Remove the brownie pops balls from the freezer and then stick the lollipop sticks in the chocolate about half of an inch and then stick it into the brownie pop balls. Only stick it in half way into the ball. This will act like glue to hold the stick in the ball.

Once done sticking them, place them back on the sheet pan and place in the fridge for 5 to 10 minutes to allow that chocolate to set.

Step 4: Dip the brownie pops balls in chocolate

And now, remove them from the fridge and then dip them in your melted chocolate. Be gentle, you should be able to push it straight down, and then cup straight up, sometimes you may need, to wiggle it back and forth a tiny bit, to cover it.

Tip: Don’t make the brownie pop ball too big, otherwise it will be pretty heavy and is prone to falling off the stick while dipping. All you need is slightly larger than a tablespoon. Smaller than a golf ball, but bigger then a large marble.

After dipping it, gently tap the stick so the excess chocolate falls back into the glass. Place the brownie pops in a styrofoam piece, if you want them to dry with no flat sides. Or you can just lay them back on the sheet pan to dry.

If you are making a pumpkin one, cut a green Mika and Ike in half and then place it on top of the orange candy melt dipped brownie pop. Which will act as the stem.

Place them back in the fridge for 15 to 20 minutes to allow the chocolate to set.

Step 5: Decorate them

After the chocolate sets they are ready. Now you can further decorate them if you like. You can draw on faces for the skeletons, pumpkins, etc. with a food writer. Which is basically just edible ink. It works okay, but is not may favorite look.

You can use a food gel which works pretty well. Another option, shown above, is using a black decorating icing. And then screw on a tip and use that. And you can always use fondant too if you like.

And there you go, you will have some awesome brownie pops ready to be eaten. Serve them right away, or you can store them at room temperature for up to 6 or 7 days.

You can also individually wrap them with treat bags as well, like I show in this cakesicles recipe. Have fun with it. Enjoy!

How long to homemade brownie pops last?

If your house is fairly cool, under 80 degrees F, they can be stored at room temperature for about a week. Or they can be stored in the fridge for a few weeks. You may also freeze them if you like for a few months.

Ingredients

  • 1 standard batch of brownies (plus ingredient to make them) from scratch or from a mix
  • 2 tbsp chocolate frosting 30g (may need more or less)
  • 2 cups chocolate, candy melts, CandiQuik, etc. 280g (doesn't have to be exact)
  • Decorations, like little candies, edible markers, icing, etc.

Instructions

  • Prepare the brownies using your favorite brownie recipe. After they bake, allow them to cool completely.

  • Cut along the edges of the pan, about 1/4th of an inch away from the side, and then scoop out the brownies and place in a large bowl. Save the edges to eat later, they are a bit hard.

  • If your brownies are fudgey already and moist, you may not need to add frosting, otherwise add a few tablespoons of chocolate frosting to the bowl and then mix it into the brownies, using your clean hands or wear food prep gloves.

  • Use a tablespoon and scoop a bit of brownie, just a bit larger then a tablespoon, roll the brownie into a ball and then place it on a sheet pan lined with parchment paper. Don't make them too big, otherwise, they will be too heavy for the stick. Place the pan of brownie balls in the freezer and chill for 30 to 45 minutes.

  • Melt the chocolate in the microwave, using bursts of 30 seconds and stirring until melted, or use the double boiler method on the stovetop. If using candy melts, add a few teaspoons of shortening while melting, this will help to thin it out.

  • Dip the sticks into the chocolate and then stick them into the brownie balls about halfway. This acts like glue to hold the stick in place. Then place the brownie balls with the sticks, back on the pan, and put them in the fridge for 5 to 10 minutes.

  • Pour the melted chocolate into narrow glasses. Remove the brownie pops from the fridge and then dip them entirely in the melted chocolate. Go straight down and then straight up, or if needed, go side to side at an angle to cover them fully.

    Tap the stick above the glass and allow the excess chocolate to drip off. Place the brownie pops in a piece of styrofoam, upright, or lay them on their side on the pan. If you have any decorations you want to stick to them, put them on now.

    Once dipped place them in the fridge for 15 to 20 minutes to set.

  • Once they have set you can decorate them however you like, using edible markers, gel, icing, fondant, etc. Have fun with the designs! Enjoy!
